This recipe requires 1 kg of strawberries which is approximately 4 cups of firmly packed chunked strawberries. You can also use blueberries, raspberries, blackberries or any combination thereof.
Also, you cannot reduce the sugar in this recipe. It will not work. Since this is essentially a candy, it just doesn’t work with less sugar.
In a heavy bottomed saucepan, mix together the strawberries, sugar, and lemon juice. Stir over low heat until the sugar is dissolved. Increase heat to high, and bring the mixture to a full rolling boil. Boil, stirring often, until the mixture reaches 220 degrees F (105 degrees °C) about 20-25 min.
